Can the work be done before we open or after we close?
That is the normal way to do it for premises. Say when the doors open and when the last table leaves, and the job is booked around that, including on your closing day.
Our summer staff kept their keys. What is the sensible thing to do?
Collect what you can, then decide by door. The outside doors and the office usually get new cylinders; an inside store room may not need one. Doing it all in one visit keeps the cost down.
